Would you like another piece of cake? Who could dismiss such an invitation? The sweet flavors recall emotions tickled by childhood that draw closer all those who share them. At Debailleul, we are proud to share with you our know how steeped in the French pastry tradition.

In our cakes and tarts, the connoisseur will find all surprising flavors, such as the smoothness of a cream, the richness of chocolate, the sweetness of an almond, the lightness of a meringue, the delicacy of a fruit mousse, and the crunch of a biscuit. He will also have his senses wowed by the original tastes and associations. To savor a Voltaire, a Merveilleux or a Javanais is like revisiting a place where once we were happy. Our challenge is to make these gateaux as perfect as memories can be.

We build on the great classics from the early 20th century such as the Tarte Tatin or lemon tart, to present a tart with pan fried apples covered with a chocolate crumble, a new combination of familiar tastes. To keep the tradition alive, one must both respect and challenge it.

For us, the respect of tradition begins with the respect of the product's authenticity. All of our ingredients are natural and have been selected for their freshness and taste. The craft and history live on in every single gesture of our craftsmen. We continue to work in the spirit of the founder, Marc Debailleul. From presentation to finish, everything is made by hand with an absolute respect of hygiene. Handling and transport are managed in a way to maintain the same level of freshness from our production kitchens to the gourmet's plate.

At Debailleul we are fully aware that our pastries are consumed first with the eyes. That is why our master craftsmen display their skills with the same attention as an artist devotes to its creation. Our love of details in every product is matched by the importance we attribute to the design and the quality of our packaging.

Our pastry range contains gateaux, feuilletée and shortbread tarts, as well as a few savory pies available in individual portions or in pieces intended for 4, 6 or 10 guests.

Macaroons

With its modest size, its roundness and mild colors, the macaroon is nothing but irresistible. One or two mouthfuls should be sufficient, one might think. Perhaps, but the pleasure is sure to last longer.

The origin of this little pastry made of almonds, sugar and egg whites goes as far as the middle ages. Somewhere in France, Italy or even in the Middle East. The books are open. Crunchy on the outside and creamy on the inside, a macaroon likes to play with contrasts.

Lemon, coffee, chocolate, raspberry, pistachio, passion fruit, speculoos orange or strawberry rose, all the perfumes enveloped by its shells draw a range of surprises. Accompanying a glass of champagne, a jug of iced tea or a steaming cup of coffee, a macaroon feels at ease on every table. This little resourceful treasure is easily imagined on a walking diner buffet or combined with a serving of ice cream.

Presented in boxes of six, the macaroons need few efforts to have you fall under their spell.
